Bored with the same old lunch

I know I should be showing you flowers but
I have to tell ya that this time of year it’s hard for us to
get a varied diet. As a matter of fact though
we eat pretty sensibly we often get into a rut with our meals.
Breakfast is the same with each of us eating
3 fried eggs a piece…sometimes he eats 4. Being the man and all:)
For lunch I make a salad with tuna added on top.
The dressing I always make myself.
I go by the salad dressing aisle in the store and think to myself
who buys this stuff?
apparently everyone! or they wouldn’t have it there.
I really like making my own.
Anyways I came across this recipe from Martha Stewart.
Most of the time I just delete the emails but this one was called
18 picnic sandwiches…….
I like sandwiches!
They listed the usual meat laden kind but then I saw this hummus one and had to check it out.
Seemed pretty easy and healthy to boot.
thought you might likey!



and it’s pretty too….except if you don’t like the color orange.
you don’t  have to decorate with it …..just eat it.
2 slices whole-wheat bread
  • 1/4 cup store-bought hummus
  • 1 tablespoon store-bought tapenade (olive spread)
  • 1/4 cucumber, thinly sliced
  • 1 coarsely grated carrot

Directions

Spread 1 slice bread with hummus; spread remaining slice of bread with tapenade

Top hummus with cucumber slices and carrot. Place bread with tapenade on top to form a sandwich.

added little tip from Martha:
Wrapping this sandwich in wax paper instead of plastic wrap
will prevent the bread from absorbing too much moisture and will keep the sandwich fresher.

( sorry for lack of visits and postings lately. These days of working 7 days a week 16 hr days
has left little time for play.
I’ll try to post some pictures soon….if I ever get time to download the few pics I have taken.

  4. I'll eat anything you make me Carole...and I don't care if it's orange...as long as I don't have to decorate with it...as you said! :)
    It does sound delicious...I like hummus, olives, cukes and carrots!

  7. Hey Carole, you hard working girl! I guess it's good that you have a lot of work but you need a little break here and there.
    The sandwich looks delicious and I will try that. Thank you for sharing the recipe! You made me laugh with your remark about the orange. Even though I don't decorate with this color, I eat orange food as long as it is the food's natural color. I was amazed to see the Orangina lemonade bottle in the background of the picture. So far I knew Orangina only from France and wasn't aware that it is available in other countries as well.
    We make the salad dressings ourself too. I'm often surprised what you can make people to buy, like cake mixes or other convenience blends. It's not so hard and doesn't take long to mix flour with sugar, cocoa, baking soda, etc., so why pay a lot more and even get chemical additives that are not needed when you mix the ingredients yourself.

    I love hummus, and also makes it myself now and then--- and like Julia, I would never buy a cake-mix, or something like that-also makes our own salat dressings :)
    Now take care--and go on eating this healphy meals, even they are the same, every day-it is a healphy the same,lol

  11. Now that's what I call a sandwich Carole. What a whoppa !!!! I love houmous ( that's how we spell it ) and it's good for you, which is a bonus. I also LOVE eggs. I always thought that you shouldn't have too many a week but, you seem to be doing OK on 3 every morning ( 4 in George's case !! ) so, I'm going to eat more now !!
    I NEARLY always make my own salad dressing....it always tastes so much better, doesn't it ? There is one that I buy that is really good but, costwise, it's so expensive compared to when you make it yourself.
    A great sandwich and one that I shall make.....Martha never fails does she ?

  13. I could not imagine what it looked like when you told me but that looks scrumptious! I may swing to the vegetarian side yet. I know Hannah would approve if I did.
    I do not know how you two keep up with those long days. I only managed a few weeks of hours like that before I crashed an entire day. It must be the vegetarian diet that gives you superhuman strength.lol
    Plan to go to Star today or tomorrow and I will get you those long promised photos.

  14. Oh yum!!!! I usually always have the same green smoothie for lunch (spinach and such) but this could make me change that. Sometimes I do love a tuna sandwich with granny smith apple slices and basil on it. But I always eat the same things over and over. I guess cause that way it is easy to shop and easy to make. Of course it was very different when all the kids were home.

  18. Those yellow flowers are blooming all over, I have to send a pic to you Sunday. Tomorrow we have gdau's dance recital. I'll make her a nosegay if the deer don't eat the flowers tonight! :(

  21. I think this would be a doable lunch for me as well!
    I am need of a change...I have been on a yogurt cup and half of a pbj kick lately!
    I hope Spring/Summer is being kind to you...our greenhouses are nearly empty and we now begin setup for the French FLea!

    Well.. it looks yummy but I would never survive being a vego.. my body is always protein deficient so I have to eat like a caveman.. hahahah

    I always make my own dressing too .. except ceaser.. I think Paul does quite a good one and if it is good enough for him,.. it's good enough for me!! hehe [or is he dead now?]

    Try and get some downtime.. I know what it is like to work round the clock and it certainly brought me undone doing that for 20 odd years..
